The cuisine on BYZANCE is inspired by the flavours of the Caribbean! The crew will work to tailor as per your preferences as they understand, the culinary experience is an integral part of your overall charter experience!

 

Breakfast Samples 

 

Eggs any style served with  bacon, sausage, toast, cereals,  fruits, coffee, tea, juice

Pancakes  and French toast available  for  children

Bagel with cream cheese served with smoke salmon mimosa 

Continental affair of Croissants,  Danish options, raisin bread, toasts, Muesli,  Yogurt, fruits, coffee, tea, juice.

 

 

Lunch Samples

Cajun spiced mahi mahi served with grilled vegetables, seasoned wedges and roasted garlic aïoli

 

Beef   or  chicken kebabs served  with couscous, and a fresh tomato, mozzarella, basil salad infused with balsamic vinaigrette

 

Caribbean fish cakes, seared yellow fin tuna, served with a rice salad  and Captain's cheese bread

 

Melon with parma ham, flying fish served with garlic potatoes

 

Fresh fruit and cheese plates for desert or fruit sorbets!

Grilled mahi mahi served with Caribbean wild rice, grilled vegetables, and plantain

Banana flambe for desert using the finest rum!

 

Pumpkin soup to start

BBQ  Rib Eye steaks, baked potatoes, corn on the cob, coleslaw and garlic bread.

Chocolate Mousse to end!

Baked leg of lamb served with scallop potatoes and christophine au gratin with a Caribbean tomato salad

Apple  Crumble

 

Caribbean fish croquettes served with a spicy tomato salsa to start

Curry shrimp served with jasmine rice, mango chutney and coriander cream
