Sample Menus

Once you confirm your charter, you will be asked to fill out a Personal Preference Form, including food and beverages. Based on this Form, we will prepare a menu proposal for your review. Sample dishes from which your menu will be prepared follow. This is only a small example of the dishes available.

Breakfasts

  • Creole omelet
  • Fresh fruit salad with yoghurt
  • Crepes with sausages
  • French toast with fruit
  • Bacon and eggs
  • Cereal, porridge
  • Fruit Juice, coffee, tea

Lunches

  • Caribbean Chicken Wrap
  • Mexican-style beef tortilla wrap with refried beans and cheese
  • Adele’s chili con carne with garlic bread
  • Cheeseburgers on the BBQ
  • Potato salad with cold cuts
  • Green salad with Tuscany dressing
  • Julienne or Greek Salad
  • Avocado stuffed with tuna, Caribbean spices

Hors d’Oeuvres

  • Shrimp cocktail with home-made sauce
  • Nachos cheese melts with salsa
  • Hummus with pita wedges
  • Crudités with home-made dip of the day
  • Hot taco dip with tortilla chips
  • Cheese and pâté

Dinners

Soups and Salads

Soups and salads may be added to the menu based on your preferences. Sample dishes follow:

  • Thai chicken noodle soup
  • Sichuan hot and sour soup
  • Lebanese-style chick pea salad
  • Chef salad with the Captain’s special vinaigrette

  • Thai-style christophene salad

Entrees

  • Sautéed Chicken Vinegar in Cream Sauce with braised leeks, sautéed tomatoes and plantain chips
  • Salmon teriyaki with okra, pilaf rice and a Greek salad
  • Thai Red Curry of Pork with Baby Corn, stir-fried mixed vegetables and jasmine rice
  • Clam linguine with Niçoise salad
  • Mahi-Mahi filets in lime-dill butter, with carrots, green beans and pilaf rice
  • Beef in black bean and chili sauce, Cantonese stir-fry of mixed vegetables and oriental egg noodles
  • Indian lamb curry with savory spicy chick peas and green beans, cucumber in yogurt and pilaf rice

Note: A good selection of wine, beer and liquor will be offered to accompany lunches and dinners.
