Captain Edward (Ed) F. West is pleased to be your host aboard Safari. His previous careers in the entertainment and restaurant industries, combined with his love of sailing and the islands, make him the perfect Captain for your adventure.
With his wife Toni, and their three sons, Captain Ed has spent the last 20 years living and working in the Virgin Islands. Captain on many various motor and sailing vessels during this time, Captain Ed is in his second year aboard Safari.
In Captain Ed’s opinion, Safari is “The perfect platform from which to explore the islands”. Over the years Captain Ed has acquired a vast knowledge of the lore and history of the Caribbean. When you vacation aboard Safari with Captain Ed, you will not only see the islands, you will know the islands!

Teri McKenna grew up in Southern California, where she raised two sons and developed a love for the ocean, and competitive sailing. Teri holds a 50 Ton Master Captains License. Her hobbies include SCUBA Diving and Photography. Teri has traveled throughout the world, often to compete in championship sailing regattas. She was also one of 3 crew members who delivered Safari on her maiden voyage across the Atlantic, from France to the Virgin Islands. Teri is in her element, sharing the wonder and beauty of this “sailors paradise” with Safari’s guests, and still can’t believe her good fortune at being able to call the islands home! Teri will be assisting Captain Ed, as 1st Mate on all “Captain Only Charters”.

Chef Alexis Garrison grew up in Mississippi, where she found her love of cooking and the ocean. Alexis’ interest in cuisine started as a Southern family tradition, cooking alongside her Mother and Grandmother. As a kid, Alexis grew up just assuming that everyone knew how to cook. Alexis’ Grandfather was a sailor, commodore of his yacht club in a small beachfront town on the gulf coast, and Alexis spent many memorable summers sailing with him.
Alexis’ family owned a restaurant, and Alexis began working there at age 17, where she explored many positions, from front of the house, to cheesecake maker, to dishwasher. She savored the buzz of the hospitality industry. After selling the restaurant in search of a less stressful environment, her, family sought out an adventure and relocated to the Virgin Islands. Alexis soon developed a newfound love of Caribbean flavors and dishes.
Continuing her culinary education, Alexis gained an appreciation for fresh seafood and Japanese flavors, while working at a well-known sushi restaurant in Hawaii. After that, she traveled to Thailand, taking cooking classes in the beautiful countryside of Changmai. Longing for the Caribbean, Alexis returned home to the Virgin Islands to begin her culinary career as a Charter Chef aboard Sailing Catamarans combining her great love of cuisine and the ocean.
