CHEF | Paolo Costantini | Italian
BIO: Meet Chef Paolo, a culinary talent whose style blends a rich array of global influences —from Italian and Mediterranean, to Spanish, Mexican, and Asian flavours. Specializing in fusion cuisine, his expertise lies in fusion cuisine—creatively combining ingredients and offering a fresh twist on the original recipe, while still being proficient in classic preparations.
With an impressive career that spans high-end restaurants in Barcelona and Italy, as well as luxury charter yachts like the 35m M/Y Musica Musica, Paolo brings both passion and professionalism to the table. His talent was recognised with a 2nd place win in the "125 feet and under" category at the prestigious Antigua Charter Yacht Show Concours de Chef.
Driven by a deep love for food and the sea, Paolo is excited to delight guests onboard with his inventive, flavour-packed creations. When he’s not cooking, you’ll likely find him fishing—a passion that began at age 11 when he worked as a young fisherman. Paolo’s connection to the ocean runs deep, and it’s something that continues to inspire his work every day.
